Vegan Stuffed Shells? Which is best to use and why.extra firm tofu or silken tofu?

I have found various sites that use either of the two (blended in food processor.) Any experience with this? Either making “cheese like” filling for stuffed shells or lasagna, etc.

I'm making pumpkin puree and the pumpkin is already done, and I just realized it said I need a hand BLENDER and I only have an electric hand mixer. I don't have a food processor or a regular blender, do you think I'll be able to use this and it will work?
